Here outlines the steps for maintaining and cleaning the Scotsman ACM207 ice machine to ensure optimal performance, hygiene, and longevity
This procedure applies to all staff members responsible for the upkeep of the ice machine.
Frequency
Daily: Basic maintenance and sanitation
Weekly: External cleaning
Monthly: Internal cleaning and sanitization
Every 6 Months: Deep cleaning and descaling
1. Daily Maintenance and Cleaning
1.1 Visual Inspection
• Check for any unusual noises or leaks.
• Ensure proper airflow around the machine.
• Inspect the ice bin for any contaminants.
1.2 Exterior Cleaning
• Wipe down the exterior using a clean cloth and a mild detergent solution.
• Dry with a clean towel.
1.3 Ice Bin Cleaning
• Remove any ice that appears dirty or fused together.
• Wipe down the interior with a food-safe sanitizer.
2. Weekly Cleaning
2.1 Air Filter Cleaning
• Remove the air filter, and rinse with warm water.
• Allow it to dry completely before reinstalling.
2.2 Drain Inspection
• Check the drain for blockages and clear if necessary.
3. Monthly Deep Cleaning and Sanitisation
3.1 Internal Cleaning
Materials Needed:
• Sanitiser
• Clean cloths
• Blue roll
Steps:
1. Turn Off the Ice Machine
• Press the power button and disconnect from the power supply.
2. Remove Ice
• Empty the ice bin into a large gastro.
5. Clean Internal Components
• Remove and soak any removable parts (scoop,) in the sanitiser
• Use a soft brush to scrub internal surfaces.
5. Flush the System
• Run a cleaning cycle
6. Sanitisation
• Wipe down all internal surfaces and let them air dry.
7. Reassemble and Restart
• Reinstall all components.
• Restore power and restart the machine.
• Refill ice
4. Bi-Annual Descaling and Deep Cleaning
• Follow the monthly cleaning steps using a descaling solution instead of regular cleaner.
• Inspect hoses, connections, and internal components for wear and tear.
• Ensure professional servicing if needed.
5. Safety Precautions
• Always disconnect power before cleaning.
• Use only Scotsman-approved cleaning solutions.
• Do not use harsh abrasives or high-pressure water.
6. Documentation
• Log each cleaning session on Trail
• Report any issues to the manager immediately
