Wastage Protocol


Every item that we waste within the business must be recorded. This includes, but is not limited to...

  • Food Items

  • Beverage Items

  • Out of Date Discarded Items

  • Spoiled Items

  • Broken Items

  • Spilled Items

  • Equipment

Weekly stock takes and line checks are carried out across the business by management and head office.


When to Record Waste

Waste must be recorded in Market Man by the close of day, every day. This applies to both Back of House and Front of House.


During the business day, waste must be recorded on Trail, which is then logged in Market Man by the department manager at the end of the business day and declared on your close check in Trail.


Once the item has been logged in Market Man, ensure that it is marked within trail as logged in Market Man.


Waste events must not be logged in Market Man after the close of the business day.

When wasting items in Market Man, it is Important to know the difference between a purchase item and a menu item...

  • Purchase Item - individually purchased item

  • Menu Item - an item from the menu that consists of multiple purchase items (i.e. Burger, Cocktail, Roast)
